Spinach Salad

I was skeptical to make this for my family, as they are not big fans of raw spinach. Much to my surprise, they came back for seconds. The dressing is made the night before and is poured over the salad just before serving . Thanks to my good friend Carol for sharing this fabulous recipe.

Spinach Salad

Ingredients

  • DRESSING

  • 1 cup vegetable oil

  • ½ cup vinegar

  • 1 medium onion, chopped fine

  • ½ cup sugar

  • 1/3 cup ketchup

  • 2 Tablespoons Worcestershire sauce

  • Salad
  • 1 lb. spinach

  • 4 ounces sliced water chestnuts (diced)

  • 5 slices fried bacon, crumbled

  • 2 hard boiled eggs, chopped

Directions

  • Put all of the dressing ingredients in a large container, mix well and refrigerate overnight.
  • Place the salad ingredients in a large bowl.
  • Pour dressing over salad just before serving and toss.
  • Note: the spinach will wilt if you put the dressing on in advance.
