Strawberry Bread

If you’re looking for a quick & easy treat that includes strawberries, look no further. This bread can be whipped up in just a few minutes without dragging out the mixer. It’s a moist, not too sweet bread, with a tasty strawberry glaze, that goes great with a cup of coffee or a tall glass of cold milk. Ingredients

  • ¾ cup sugar

  • ½ cup milk

  • ½ cup vegetable oil

  • 1 large egg

  • 1 ½ teaspoon vanilla extract

  • 2 cups + 2 Tablespoon flour

  • 2 teaspoons baking powder

  • ½ teaspoon salt

  • 1 ½ cups diced fresh strawberries

  • GLAZE

  • 3 Tablespoons diced fresh strawberries

  • 1 cup powdered sugar

  • 1 teaspoon milk

Directions

  • Preheat oven to 350 degrees.
  • Lightly spray a 9×5 inch loaf pan with baking spray.
  • In a medium size bowl, whisk together the sugar, milk, oil, egg & vanilla.
  • In another medium size bowl, stir together 2 cups flour, the baking powder and salt.
  • Add the flour mixture to the wet ingredients and stir just until combined.
  • In a small bowl, combine the diced strawberries with the 2 Tablespoons flour, tossing to coat the strawberries.
  • Fold the strawberries into the batter.
  • Pour the batter into the prepared loaf pan.
  • Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean.
  • 10. Let the bread cool in the pan for 10 minutes.
  • 11. Remove the bread from the pan and place on a cooling rack until completely cooled.
  • 12. When the bread has cooled, prepare the glaze.
  • 13. Place the 3 Tablespoons of diced strawberries in a bowl and mash them.
  • 14. Stir in the powdered sugar and the teaspoon of milk.
  • 15. Stir until combined. The glaze should be thick. If not, add a little more powdered sugar.
  • 16. Glaze the loaf & let the glaze set for about 30 minutes.
  • 17. Serve
