Peruvian Green Sauce (Aji Verde)

While searching the web for a new recipe to try, I came across this yummy dipping sauce. This green dipping sauce, with it’s fresh and tangy palate pleaser, is traditionally served with Peruvian chicken. It is such a delightful sauce, that I find myself craving it to dress my salad or to dip my veggies in. It’s quick and easy to whip up and it’s sure to impress your guests. Thanks to the folks at platings and pairings for sharing this gem.

Peruvian Green Sauce (Aji Verde)

Ingredients

  • 3 jalapeno peppers, chopped (seeds & ribs removed)

  • 1 cup fresh cilantro leaves

  • 2 green onions, chopped (green parts only)

  • 2 cloves garlic, peeled and chopped

  • ½ cup mayonnaise

  • ¼ cup Greek yogurt

  • 1 Tablespoon lime juice

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 2 Tablespoons extra virgin olive oil

Directions

  • Combine all ingredients except the olive oil into a blender and process until smooth.
  • With the blender running, slowly drizzle in the olive oil until combined.
  • Transfer sauce into a jar, cover and refrigerate until ready to serve.
