No Peek Chicken

Years ago, you knew what day it was by what was on the dinner table…you know, Wednesday was Prince spaghetti day and Friday, grilled cheese. My sister Elaine was in nursing school back then, along with working full time, so she and her daughter moved in with me .One day she came home so excited because a coworker had shared her lunch with her and it was a dish called “No Peek Chicken”. We had just discussed our ho hum menus a few nights prior, so we were thrilled to bring a new dish to the table. Needless to say, its been in my recipe collection for many years. Talk about flavorful, this dish has it all. Open a can of beans or corn and dinner is served!

No Peek Chicken

Ingredients

  • 1 whole cut up chicken

  • 2 Cups Minute Rice Uncooked

  • 1 pkg Lipton dried onion soup mix

  • 1 can Cream of Celery Soup

  • 1 can Cream of Mushroom Soup

  • 1 Cup water

Directions

  • Preheat oven to 325 degrees
  • Grease the bottom and sides of a 9×13 pan
  • Mix the Minute Rice, dried soup, canned soups and water together and mix well.
  • Pour and spread in bottom of pan
  • Press the chicken into the mixture
  • Cover tightly with double layer of foil and bake for 2 hours.
  • Don’t peek at the chicken while its cooking!
