Green Pea, Cheddar & Bacon Salad

Back in our camping days, we used to stop at a little Mom & Pop grocery store where they sold homemade salads. One of our favorites was a green pea salad with bacon and cheese. I’ve tried many recipes trying to find one that closely resembled the pea salad that we enjoyed and finally, came across this gem. It’s creamy and delicious, simple to put together and is a perfect side for any dish. I’ve found that if you chill this salad overnight, it’s even more flavorful as all the ingredients meld together. Green Pea Salad

Ingredients

  • ½ cup sour cream

  • ½ cup mayonnaise

  • 1 Tablespoon sugar

  • 1 Tablespoon apple cider vinegar

  • ½ teaspoon salt

  • 4 cups frozen peas, thawed

  • 8 slices bacon, cooked and crumbled

  • ½ medium red onion, finely diced

  • 1 ½ cups cheddar cheese, cubed small

Directions

  • In a large bowl, whisk together the sour cream, mayonnaise, sugar, apple cider vinegar and salt until combined.
  • Add the peas, bacon, onion and cheese to the bowl and gently stir to coat in dressing.
  • Chill for at least one hour before serving.

Notes

  • Note: I prefer chilling this salad overnight to bring out all the wonderful flavor.
