Zucchini Appetizer

I sampled this appetizer at a party and was amazed at how flavorful it was. I have served this many times. Although I prefer it served hot, I have been at p[arties where it was served cold and it was still very tasty.

Zucchini Appetizer

Ingredients

  • 3 cups thinly sliced zucchini (not peeled)

  • 1 cup Bisquick

  • ½ cup finely chopped onion

  • ½ cup grated parmesan cheese

  • 4 eggs

  • ½ cup vegetable oil

  • 1/8 teaspoon garlic powder

  • 1 teaspoon oregano

  • 1/8 teaspoon pepper

  • 1 teaspoon parsley

Directions

  • Preheat oven to 350 degrees
  • Grease a 9X13 inch pan
  • Combine all ingredients in a large bowl and mix well with a spoon or spatula ( do not beat).
  • Pour into the prepared pan.
  • Bake for 25 minutes or until lightly browned.
  • Cool slightly and cut into small squares.
  • May be served hot or cold!
