White Chocolate Chip Cookies

These chunky, crunchy cookies are loaded with white chocolate chips and nuts . This cookie freezes well, which is great because this recipe yields 6 dozen cookies!

Ingredients

  • 1 cup butter

  • 1 cup light brown sugar

  • 1 cup white sugar

  • 2 eggs

  • 2 teaspoon vanilla

  • 3 cup flour

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 1 ½ cups oatmeal

  • 2 cups white chocolate chips

  • 1 cup pecans, chopped

Directions

  • Preheat oven to 350 degrees.
  • In a bowl, cream together the butter and sugars until smooth.
  • Stir in the egg and vanilla.
  • Add the flour, baking powder, baking soda and salt until blended.
  • Stir in the oatmeal, white chocolate chips and pecans, mixing thoroughly.
  • Drop by tablespoon, onto greased (or parchment paper lined) cookie sheet, about 2 inches apart.
  • Bake for 10 to 12 minutes or until edges are just starting to brown.
  • Remove from cookie sheet to cool.
  • Makes 6 dozen cookies.
