Spumoni Slices

Here’s another family favorite…Grandma Drapak’s famous spumoni cookies. This cookie features 3 scrumptious flavors…cherry, chocolate and pistachio, all packed into one fantastic bite.

Spumoni Slices

Ingredients

  • ½ cup shortening

  • ½ cup butter

  • 3 cup flour

  • 1 cup sugar

  • 1 egg

  • 2 Tablespoons milk

  • 1 teaspoon vanilla

  • ½ teaspoon baking soda

  • 1 square (1 ounce) semi-sweet chocolate, melted and cooled

  • 4 teaspoon milk

  • 1/3 cup candied red cherries, chopped

  • ½ cup pistachio nuts, chopped

  • ¼ teaspoon rum flavoring

  • Few drops green food coloring

Directions

  • Beat shortening and butter for 30 seconds or until blended.
  • Add half the flour and the sugar and beat well.
  • Add the egg, 2 Tablespoons milk, vanilla, baking soda and ¼ teaspoon of salt. Beat until thoroughly combined, scraping sides of bowl occasionally.
  • Stir in remaining flour.
  • Divide dough into three portions.
  • In one of the portions, add the melted chocolate and 2 teaspoons of milk.
  • Into the second portion, add the cherries.
  • Into the third portion, add the pistachio nuts, the rum flavoring, 2 teaspoons of milk and enough green food coloring to tint the dough green.
  • To shape the dough, line the bottom and sides of an 8x4x2” loaf pan with plastic wrap.
  • 10. Press the cherry filled dough evenly into the bottom of the pan.
  • 11. Layer the chocolate dough on top.
  • 12. Layer the green dough on top.
  • 13. Cover and chill at least 4 hours, but overnight works best.
  • 14. Preheat oven to 375 degrees
  • 15. Invert pan and remove the plastic wrap.
  • 16. Cut dough into ½ inch thick slices.
  • 17. Cut each slice crosswise into 3 pieces.
  • 18. Place 2” apart on ungreased cookie sheet.
  • 19. Bake for 8 to 10 minutes or until edges are lightly browned.
  • 20. Remove and cool on wire rack
