Smoked Salmon Mousse Stuffed Tomato Appetizer

This appetizer is easy to make and so very flavorful. After assembling these, I put them inside candy size paper cups so they don’t roll over and lose any of the delicious salmon mousse filling.

Ingredients

  • 8 ounces cream cheese, softened

  • 2 ounces smoked salmon (remove bones and skin)

  • A few drops of lemon juice

  • 2 to 3 Tablespoons whipping cream

  • Dash of pepper

Directions

  • Combine all ingredients in a bowl and whip until fluffy.
  • Hollow out 1 pint of cherry tomatoes.
  • Fill tomatoes using a pastry bag ( I used an infant’s spoon)
  • Refrigerate until serving time.
