Skillet BBQ Chicken

For years I had lived in an apartment complex where BBQ grills were not allowed. I missed having BBQ chicken. Then I came across this tasty, tangy recipe in an old Hunt’s recipe book . The chicken is browned and then simmered in a delicious sauce, leaving you with tender, juicy, flavorful chicken.

Ingredients

  • 2 ½ lbs. chicken pieces

  • ¼ cup flour

  • 1 teaspoon salt

  • ¼ teaspoon pepper

  • 3 Tablespoons oil

  • 8 ounces tomato sauce

  • ¼ cup chopped onion

  • ½ cup water

  • 2 Tablespoons vinegar

  • 1 Tablespoon brown sugar

  • 1 Tablespoon Worcestershire sauce

  • ½ teaspoon salt

Directions

  • Mix flour, salt and pepper in a bag.
  • Place chicken pieces in bag to coat with the flour mixture.
  • Shake off excess flour.
  • In skillet, brown chicken in oil; over medium heat.
  • Pour off the fat.
  • Combine the tomato sauce, onion, water, vinegar, brown sugar, Worcestershire sauce and salt and pour of the chicken.
  • Cover skillet and simmer for 45 minutes or until chicken is tender, basting the chicken every 15 minutes.
