Ranch Hummus

Before I retired, my co-workers and I would always find an excuse to have a little “pot luck” luncheon, where we would bring our favorite dish to share. My friend Vera would bring this delicious Hummus which she served with pita chips or veggies. It is easy to make, is much more economical than the tiny containers you get at the grocery stores and you know exactly what’s in it. It’s so rich, creamy and tasty.

Ranch Hummus

Ingredients

  • 1 (15 ounce ) can garbanzo beans, rinsed and drained

  • 1 cup fat free cottage cheese

  • ¼ cup nonfat plain yogurt

  • 1 package (1 ounce) dry Ranch seasoning mix

  • 1 Tablespoon fresh squeezed lemon juice

  • 1 Tablespoon Olive Oil

  • 1 teaspoon finely chopped garlic

Directions

  • Combine all ingredients in a food processor or blender.
  • Puree until mixture is smooth and slightly fluffy, scraping sides as needed.
  • Transfer hummus to a storage container , cover and refrigerate for several hours or overnight.
  • Serve with Pita bread, pita chips or veggies.
