Baked Salmon Dijon

What do you do when your doctor tells you to eat foods rich in Omega 3? You turn to salmon, which isn’t a problem if you like fish…which I don’t. So I searched and tried many recipes and by far, this one is the winner. The fish comes out perfectly every time… juicy and flaky with a little tang.

Baked Salmon Dijon

Ingredients

  • 4 salmon fillets, each approx 4 ounces

  • 3 Tablespoons Dijon mustard

  • salt and pepper to taste

  • ¼ cup Italian style bread crumbs

  • 2 Tablespoons melted butter

Directions

  • Preheat oven to 400 degrees .Line a shallow baking pan with parchment paper or aluminum foil.
  • Place salmon skin-side down on foil. Spread a thin layer of mustard on the top of each fillet, and season with salt and pepper. Top with bread crumbs, then drizzle with melted butter.
  • Bake in a preheated oven for 15 minutes, or until salmon flakes easily with a fork.

Notes

  • The original recipe calls for 2 Tablespoons of butter, but I cut it back to 1 teaspoon per salmon fillet. I also use less Dijon (personal preference)
