White Chocolate Chip Cookies

1 cup butter
1 cup light brown sugar
1 cup white sugar
2 eggs
2 teaspoon vanilla
3 cup flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 ½ cups oatmeal
2 cups white chocolate chips
1 cup pecans, chopped
Directions
- Preheat oven to 350 degrees.
- In a bowl, cream together the butter and sugars until smooth.
- Stir in the egg and vanilla.
- Add the flour, baking powder, baking soda and salt until blended.
- Stir in the oatmeal, white chocolate chips and pecans, mixing thoroughly.
- Drop by tablespoon, onto greased (or parchment paper lined) cookie sheet, about 2 inches apart.
- Bake for 10 to 12 minutes or until edges are just starting to brown.
- Remove from cookie sheet to cool.
- Makes 6 dozen cookies.
