Turtle Cookies

These tender cookies, with a pecan in every bite , bursting with flavor, and topped off with chocolate icing, look like little turtles.

Turtle Cookies

Ingredients

  • 1 ½ cups sifted flour

  • ¼ teaspoon baking soda

  • ¼ teaspoon salt

  • ½ cup butter

  • ½ cup brown sugar, packed

  • 1 egg (whole)

  • 1 egg, divided

  • ¼ teaspoon vanilla

  • 1/8 teaspoon maple extract

  • 90-150 pecan halves

  • 1/3 cup semi sweet chocolate chips

  • ¼ cup milk

  • 1 Tablespoon butter

  • 1 cup powdered sugar, sifted

Directions

  • Preheat oven to 350 degrees
  • Sift together the flour, baking soda and salt.
  • Cream the butter and brown sugar until light.
  • Add the whole egg and 1 egg yolk, the vanilla and maple extract. & beat well.
  • Add the flour mixture gradually until thoroughly mixed.
  • Chill batter for 30 minutes
  • Arrange pecan halves in groups of 5 on greased (or parchment lined )baking sheets to resemble the head and legs of a turtle.
  • Shape rounded teaspoons of dough into balls.
  • Dip the bottoms into the unbeaten egg white and press lightly onto the nuts so pecan tips will show when cookies are baked.
  • 10. Bake for 10 to 13 minutes, until just starting to brown
  • 11. Cool and frost as follows:
  • 12. Combine the chocolate chips, milk and butter in the top of a double boiler. Heat mixture until melted and blend until smooth.
  • 13. Remove from heat and add the powdered sugar, beating until smooth and glossy. If it’s too thin, add a little more powdered sugar until it reaches desired consistency.
  • 14. Spread over cookies using about 1 teaspoonful per cookie. Set aside until icing sets.
