This appetizer is easy to make and so very flavorful. After assembling these, I put them inside candy size paper cups so they don’t roll over and lose any of the delicious salmon mousse filling.
Smoked Salmon Mousse Stuffed Tomato

8 ounces cream cheese, softened
2 ounces smoked salmon (remove bones and skin)
A few drops of lemon juice
2 to 3 Tablespoons whipping cream
Dash of pepper
Directions
- Combine all ingredients in a bowl and whip until fluffy.
- Hollow out 1 pint of cherry tomatoes.
- Fill tomatoes using a pastry bag ( I used an infant’s spoon)
- Refrigerate until serving time.
