Scalloped Potatoes

I’ve been serving these potatoes for many years, usually with ham. The potatoes cook into a tender pillow of goodness, in a creamy sauce laced with cheddar cheese.

Ingredients

  • 3 Tablespoons butter

  • 2/3 cup minced onions

  • 3 Tablespoons flour

  • 1½ teaspoon salt

  • Dash pepper

  • 1½ cup milk

  • 4 large potatoes, peeled and thinly sliced

  • 4 ounces sharp cheddar cheese, shredded

Directions

  • Preheat oven to 375 degrees
  • Spray the bottom and sides of a casserole dish with cooking spray
  • Heat milk, butter and flour in a saucepan until thickened,
  • Add salt, pepper and cheese. Stir until smooth.
  • Place half of the potatoes in the casserole dish.
  • Sprinkle with half of the onions.
  • Pour half of the cheese sauce over the potatoes.
  • Repeat the potato, onion and sauce layers.
  • Cover and bake for 1 hour.
  • 10. Uncover and cook 30 minutes more or until tender.
  • 11. Sprinkle with paprika for color (if desired)
  • 12. Let rest for 5 minutes before serving.
