Rice Pilaf

Recently I baked some chicken for dinner and realized I didn’t have any potatoes for a side dish. I quickly ran to my computer in search of a quick and easy side dish recipe with ingredients that I had in my pantry. This dish was flavorful, moist and tender. The only change I made was adding a seasoning called Zatar to compliment the dish I was serving. We enjoyed it with the Zatar, but I have listed that ingredient as “optional”. Feel free to add your favorite seasoning or skip any additions as this side dish is delicious without any extras! Thanks to Sarah Billings on allrecipes.com for sharing the recipe.

Ingredients

  • 2 Tablespoons butter

  • ½ cup orzo pasta

  • ½ cup chopped onion

  • 2 cloves garlic, finely minced

  • ½ cup jasmine rice (uncooked)

  • 2 cups chicken broth

  • ½ teaspoon Zatar seasoning (optional)

Directions

  • Melt the butter in a skillet over medium-low heat.
  • Add the orzo pasta and onion and sauté until orzo is golden brown and the onions are soft.
  • Add the garlic and rice and cook for another minute.
  • Add the chicken broth and Zatar seasoning (optional).
  • Increase heat to high until the liquid comes to a boil. Reduce heat, cover skillet and simmer for 20-25 minutes or until rice is tender.
  • Remove from heat, let rest for 5 minutes, then fluff with a fork and serve.
