Eggnog Bread

Ingredients

  • 1 ½ cups all purpose flour

  • 1 cup sugar

  • ½ teaspoon salt

  • 1 teaspoon baking powder

  • ½ teaspoon cinnamon

  • ¼ teaspoon nutmeg

  • ¾ cup eggnog

  • ½ cup vegetable oil

  • 2 large eggs, beaten

  • 1 teaspoon vanilla extract

  • ½ teaspoon rum extract

  • Eggnog Glaze

  • 1 cup powdered sugar

  • 2 Tablespoon Eggnog

  • ½ teaspoon vanilla extract

  • ¼ teaspoon rum extract

  • 1/8 teaspoon nutmeg

Directions

  • Preheat oven to 350 degrees.
  • Spray a 8 ½”X4 ½” loaf pan with cooking spray and set aside.
  • In a large bowl, whisk together the flour, sugar, salt, baking powder, cinnamon and nutmeg.
  • In a separate bowl, blend together the eggnog, oil, eggs, vanilla and rum extracts.
  • Slowly stir the wet ingredients into the flour mixture, stirring until combined.
  • Pour the batter into the prepared loaf pan. Tap the pan a few times on the counter to remove any air bubbles. 7. Bake for 65 to 70 minutes, or until a toothpick inserted in the center comes out clean. If during baking, the top begins to get too brown, cover it loosely with foil.
  • When baking is done, remove from the oven and let it cool for 15 minutes before removing it from the pan.
  • Place the bread on a wire rack until totally cooled.
  • 10. Prepare the glaze by putting all the glaze ingredients in a bowl and mixing well. If the glaze is too thick, add another Tablespoon of Eggnog to thin it out.
  • 11. Drizzle the glaze over the bread and refrigerate to “set” the glaze.
