Oatmeal Carmelites

This buttery, chewy, nutty and downright delicious bar cookie is one of the best bar cookies I have ever eaten. With just the right amount of chocolate and caramel, it’s sure to please even the fussiest of cookie critics!

Ingredients

  • 32 Kraft caramels

  • 5 Tablespoons cream (half & half)

  • 1 cup flour

  • 1c. quick oats

  • ¾ cup brown sugar

  • ½ teaspoon baking soda

  • 2/3 cup butter, softened

  • 1 cup chocolate chips

  • ½ cup chopped nuts

Directions

  • Preheat oven to 350 degrees
  • In a double boiler, melt the 32 caramels with the cream. Set aside.
  • In a bowl, combine the flour, oats, brown sugar, baking soda and butter mixing wel.
  • Press ¾ of the mixture into a 9×13 inch pan.
  • Bake for 10 minutes.
  • Remove from oven and sprinkle on the chocolate chips and then the nuts
  • Pour the caramel mixture on top, spreading evenly.
  • Crumble the remaining dough over the caramel.
  • Return to oven and bake for 20 minutes.
  • 10.Cool for one hour and cut into small bars.
