Mexican Wedding Cookies

This is probably one of the first recipes I put in my recipe collection, probably around 56 years ago. I had found it while looking through my mother’s loose recipes and I copied it to put in my “hope chest”. I usually make these at Christmas time, when I do major cookie bakes. This is a very dainty, tender cookie laced with chopped nuts and rolled in powdered sugar.

Ingredients

  • ½ cup butter

  • ½ cup shortening

  • 1 teaspoon vanilla

  • 2 cup flour

  • 1 cup chopped nuts

  • 6 Tablespoon powdered sugar plus additional for rolling

Directions

  • Preheat oven to 400 degrees
  • Cream butter, shortening and vanilla together until well blended.
  • Stir in the flour, nuts and sugar. Mix well.
  • Shape in small balls and place on an ungreased cookie sheet.
  • Bake for 10 minutes.
  • Remove from oven and let rest for 5 minutes.
  • Roll the warm cookie in powdered sugar and cool.

Notes

  • Makes about 3 dozen cookies.
