Ham Salad Spread

When I was a little girl, just a few DECADES ago, my Mom used to make a sandwich spread out of leftover ham. I hadn’t thought about it in years when all of a sudden, the memory just popped in my head. Since I just cooked a ham yesterday, I decided to bring out the food processor and see what I could create. I added a bit of this and a bit of that, and came up with this delicious spread. My Mom always decorated the ham with whole cloves and I loved that hint of flavor, so I added just a smidgeon of ground cloves to this dish. My husband absolutely loved it (no surprise…he LOVES ham), and I think you will too!

Ham Salad Spread

Ingredients

  • 4 cups diced ham

  • 2/3 cup diced celery

  • 1/3 cup diced onion

  • ¾ cup mayonnaise

  • 2 Tablespoon sweet pickle relish

  • 2 teaspoons Dijon mustard

  • 1 1/2 teaspoons lemon juice

  • Sprinkle of black pepper

  • Pinch of ground cloves

Directions

  • Put the ham, celery and onions in the food processor and pulsate until the mixture is the consistency you desire.
  • Place the mixture into a large bowl and add the remaining ingredients
  • Mix well and refrigerate until ready to serve.
