German Potato Salad II

My supervisor, Cathy, brought this dish to several of our office parties. It’s quick and easy to make and a little bit different than the traditional German potato salad I grew up with. I especially enjoy the red onions, the” twang” of the apple cider vinegar and of course, BACON!

German Potato Salad II

Ingredients

  • 12 slices bacon, fried and crumbled (you will be using that same skillet with the bacon grease, for the sauce)

  • 6 medium red potatoes, cooked, peeled and sliced

  • 1 large red onion, sliced thin

  • 2/3 cup water

  • 2/3 cup sugar

  • 2/3 cup apple cider vinegar

  • 2 teaspoons flour

  • 1 Tablespoon parsley

  • 1 teaspoon salt

  • ¼ teaspoon pepper

Directions

  • Place the sliced potatoes, onions and crumbled bacon in a large bowl.
  • Add water, sugar, vinegar and flour to the skillet with the bacon grease. Boil until thickened.
  • Pour over potatoes and onions. Sprinkle with parsley, salt and pepper and mix well.
