Crustless Spinach Quiche

This gluten free spinach quiche will be enjoyed by everyone. It’s easy to assemble and tastes fabulous. Chock full of spinach, onions, eggs and cheese.

Crustless Spinach Quiche

Ingredients

  • 1 Tablespoon vegetable oil

  • 1 medium onion, chopped

  • 10 ounce package frozen chopped spinach, thawed and drained

  • 5 eggs, beaten

  • 3 cups shredded Muenster cheese

  • ¼ teaspoon salt

  • 1/8 teaspoon black pepper

  • ¼ teaspoon smoked paprika

  • 1/8 teaspoon garlic powder

Directions

  • Preheat oven to 350 degrees .
  • Lightly grease a 9 inch pie pan.
  • Heat oil in a large skillet over medium-high heat.
  • Add onions and cook, stirring occasionally, until onions are soft.
  • Stir in spinach and continue cooking until excess moisture has evaporated.
  • In a large bowl, combine eggs, cheese, and seasonings.
  • Add spinach mixture and stir to blend.
  • Scoop into prepared pie pan.
  • Bake in preheated oven until eggs have set, about 30 minutes.
  • Let cool for 10 minutes before serving.

Notes

  • On occasion, I have added a few slices of cooked, crumbled up bacon. Also, if you like sweet red peppers, you can dice up 1/2 cup of peppers and saute them with the onions. Just add items your family likes and call it your own.
