Corned Beef & Cabbage (Instant Pot)

Years ago, I always cooked my corned beef in the oven in a covered roaster. Then the slow cookers came about and I switched to that method. I was never satisfied with the outcome. Either the meat was a little tough or it fell apart…it was never “just right.” Then I bought an Instant Pot and tried cooking my St. Paddy’s Day feast in it. It was absolutely perfect. The meat was tender, juicy and flavorful. The veggies were perfect as well. I want to mention that the first time I tried this method, I used a stout beer. Personally, I didn’t care for it. I felt the strong flavor was almost bitter. Now, I use regular old beer (Miller Lite) and the flavor is amazing, and I don’t even like beer!! I serve this with slices of homemade Irish Soda Bread. You’ll find that easy to make recipe on this site as well. Enjoy!

Ingredients

  • 3 ½-4 pound corned beef

  • 2 medium onions, quartered

  • 1 Tablespoon minced garlic

  • 12 ounce can of beer

  • 2 ½ cups water

  • 4 medium size red potatoes, halved

  • ½ pound carrots (cut into 2 inch pieces)

  • Small head of green cabbage, cut into wedges

Directions

  • Rinse the corned beef really well.
  • Place the onions in the bottom of the Instant Pot.
  • Place the corned beef (fat side up) on top of the onions.
  • Sprinkle the corned beef with the seasoning packet that came with the corned beef.
  • Add the garlic.
  • Pour the beer and water in the cooker and seal.
  • Cook on high for 75 minutes. Let pressure drop on its own accord.
  • When done, remove the meat and half of the liquid from the cooker.
  • Place the meat in a container with the liquid you removed and cover with foil or a lid to keep it hot while the veggies are cooking.
  • 10. To the remaining liquid in the cooker, add the potatoes and carrots.
  • 11. Place the cabbage wedges on top of the carrots.
  • 12. Seal cooker and cook on high for 4 minutes. When the 4 minutes are done, manually drop the pressure.
  • 13. Remove veggies from the cooker, slice the corned beef and serve.
