Chocolate Chip Banana Bread

Chocolate Chip Banana Bread

Ingredients

  • ½ cup unsalted butter, room temperature

  • ½ cup sugar

  • ¼ cup firmly packed light brown sugar

  • 2 eggs, beaten

  • 1 teaspoon vanilla extract

  • 1/3 cup buttermilk or sour cream

  • 1 ½ cups very ripe bananas (approx. 3 medium size), mashed

  • 1 ¾ cups all purpose flour

  • ¼ teaspoon salt

  • 1 teaspoon baking soda

  • ¼ teaspoon baking powder

  • ¼ teaspoon cinnamon

  • ½ cup chocolate chips

  • ½ cup chopped pecans (optional)

Directions

  • Preheat oven to 350 degrees
  • Spray coat a 9×5 inch loaf pan with non-stick spray
  • In a large bowl, cream the butter and sugars.
  • Stir in the eggs, vanilla, buttermilk and mashed bananas, blending well.
  • Fold in the flour, salt, baking soda, baking powder, cinnamon, chocolate chips and pecans.
  • Spoon the mixture into the loaf pan and bake for 55 to 60 minutes or until a toothpick inserted in the middle comes out clean.
  • Let cool 15 minutes before removing from the pan.
  • Cool thoroughly before serving.
