Cherry Cheesecake Tarts

Pop one of these bite size cheesecake tarts into your mouth to experience sweet perfection. You won’t be able to eat just one!

Cherry Cheesecake Tarts

Ingredients

  • Crust
  • 2 cups graham cracker crumbs

  • 2 Tablespoons sugar

  • 1 stick butter (melted)

  • Filling
  • 16 ounces (2 packages) cream cheese, softened

  • ¾ cup sugar

  • 3 eggs

  • 1 teaspoon vanilla

  • Topping
  • 1 can (21 ounces) Cherry Pie Filling

Directions

  • To Prepare the crust:
  • In a medium bowl, combine the graham cracker crumbs,sugar and melted butter and mix well.
  • Place mini cupcake liners (candy size) on a baking sheet (one with a lip)
  • Put ½ teaspoon crust mixture into each paper cup and press the crumbs down with the bottom of a shot glass.
  • Preheat oven to 300 degrees
  • To Prepare the filling :
  • In a large bowl, beat the cream cheese and sugar together until well incorporated.
  • Add the eggs, one at a time, beating well after each addition.
  • Add the vanilla and mix well.
  • Fill the paper cups ½ full.
  • Bake at 300 degrees for approx. 15 minutes (until just starting to brown). Watch carefully…they burn fast.
  • Cool & then cover each tart with a cherry from the can of cherry pie filling.
  • Keep refrigerated until serving time.
