This recipe was given to me by my friend Huan many years ago. I used to tell her that her cooking brought joy to my heart, only to learn that her name, Huan, meant “Joy”. What a coincidence! I hope you enjoy this recipe as much as I do.

Chicken & Veggie Stir Fry
Once upon a time, I decided to try to create a stir fry dish, using all of the things my family enjoys. The dish was a success! You can add or omit items according to your family’s taste. The sky’s the limit.
Chicken & Sweet Tater Bake
I had a sweet potato that needed to be used and came across this delightful recipe. I served it with a side of roasted brussel sprouts and a spoonful of applesauce. It’s become one of our favorites and best of all, it’s easy to prepare!
Cheeseburger Pie
I came across this recipe years ago on the back of a box of Bisquick and it quickly became a family favorite. It’s a “no fail” recipe, that you can switch around ingredients to suit your families taste. For example, you can swap the cheddar to Monterey Jack, add some chopped jalapeno peppers or add […]
Caramelized Pork Loin with Apples
This pork loin roast, surrounded in apples and other goodies, always turns out tender and juicy, not to mention mouth watering delish!
Caesar Salad with Chicken
I came across this recipe a few years ago and my entire family raves over this dish. It’s crisp, refreshing and oh so flavorful. Although this recipe doesn’t call for olives, I always add a handful or two of Kalamata olives. I think it just adds another level of goodness to this already scrumptious salad!
Buttermilk Fried Chicken & Biscuits
This recipe was shared by an old gal from West Virginia . The chicken just melts in your mouth and the biscuits are nice and tender.
Blueberry French Toast Bake
Scrumptious fresh blueberries nestled in cream cheese, surrounded by cubes of french toast, slathered in a luscious blueberry sauce. This dish is prepared the night before, making it the perfect dish for a brunch or breakfast for your overnight guests.
Black Bean Taco Casserole
This tasty dish, shared at a pot luck luncheon, was the talk of the lunchroom. Everyone, including me, requested the recipe. Thanks to Monica, this is now in my “easy dinners” recipe file. It goes great with a side of Guacamole, tortilla chips and a dollop of sour cream.
Beef Teriyaki
It’s been over 40 years since my old friend Bong shared this recipe with me. It’s quick and easy and oh so tasty. It is served over rice and pairs well with sauteed spinach and garlic.
