Black Bean Taco Casserole

This tasty dish, shared at a pot luck luncheon, was the talk of the lunchroom. Everyone, including me, requested the recipe. Thanks to Monica, this is now in my “easy dinners” recipe file. It goes great with a side of Guacamole, tortilla chips and a dollop of sour cream.

Ingredients

  • 1 pound ground beef

  • 1 can (15 ounces) black beans, not drained

  • 1 package Taco Seasoning

  • 1- 9 ounce can whole kernel corn, drained

  • ½ cup chunky salsa

  • 1 cup shredded Monterey Jack or Cheddar cheese

  • 1 cup broken tortilla chips.

Directions

  • Preheat the oven to 350 degrees
  • Cook the ground beef in a skillet. Remove any excess grease.
  • Add the undrained black beans, taco seasoning, corn and salsa to the skillet and simmer for 10 minutes.
  • Lightly oil a casserole dish.
  • Place the meat mixture into the casserole dish.
  • Sprinkle the broken tortilla chips over the meat mixture.
  • Cover the chips with the cheese and bake for 20 minutes or until cheese is melted and bubbly.

Notes

  • If your family likes their dishes with more “spunk”, add a hot pepper or two to the skillet when browning the meat.
