Carrot & Ginger Soup

It’s that time of year when I find myself yearning for a big bowl of hot soup to warm me up on a cold winter’s day. This easy to make recipe for a creamy, thick and tasty soup, hits the spot! And the nice thing is, you can make it your own by adding additional herbs or spices, such a rosemary, coriander, nutmeg or even a dash of cinnamon. You can use vegetable broth instead of the chicken broth. You can substitute coconut milk or almond milk for the whipping cream. The possibilities are endless. Personally, I like the recipe as is…simple, yet delicious. If I make this for lunch, I enjoy it with a buttered dinner roll. If served for dinner, I usually serve this with a grilled cheese or a Monte Cristo sandwich.

Ingredients

  • 2 Tablespoons butter

  • 2 onions, peeled and chopped

  • 6 cups chicken broth

  • 2 pounds carrots, peeled and sliced

  • 2 Tablespoons freshly grated ginger

  • 1 cup whipping cream

  • Salt & pepper to taste

  • Fresh parsley for garnish (optional)

Directions

  • Melt the butter in a large pot.
  • Add the onions and saute until the onions are soft and transparent.
  • Add the broth, carrots and ginger.
  • Cover and bring to a boil.
  • Reduce heat and simmer until carrots are fork tender.
  • Remove from heat and puree the carrots in batches in a blender (or use an immersion blender) blending until carrots are smooth.
  • Return carrot mixture to the pot and add the whipping cream.
  • Heat for a few minutes.
  • Add salt & pepper to taste.
  • 10. Garnish with fresh parsley flakes if desired.
