Caramel Corn

A co-worker of mine shared this recipe with me several years ago. It’s easy to prepare and is so delicious, you’ll want to double the recipe. So Ellen M., where ever you might be, thanks for this excellent recipe.

Caramel Corn

Ingredients

  • 8 cup popped popcorn (microwave butter popcorn is perfect)

  • ¾ cups packed brown sugar

  • 6 Tablespoons butter

  • 3 Tablespoons light corn syrup

  • ¼ teaspoon salt

  • ¼ teaspoon baking soda

  • ¼ teaspoon vanilla

Directions

***Preheat oven to 300 degrees***

  • Pop the popcorn and remove the un-popped kernels.
  • Put popcorn into a 17x12x2 inch baking pan.
  • In a 1 ½ quart saucepan, combine the sugar, butter, corn syrup and salt. Stir over heat until butter melts and mixture comes to boiling. Cook, without stirring, for 5 minutes more, being careful not to burn.. Remove from heat.
  • Stir in the baking soda and vanilla. Pour over the popcorn, gently stirring to coat.
  • Bake in a 300 degree oven for 10 minutes.
  • Stir and bake 10 minutes more.
  • Remove to a large bowl to cool.

Notes

  • Although the instructions don’t call for it, I line the baking pan with parchment paper. It makes clean up easier and who doesn’t appreciate that?
