Azteca Chicken

Here’s a slow cooker chicken recipe that’s sure to please the family and is easy to make! When my youngest sister Joan from Colorado came to care for me when I had surgery, she made this incredible dish for us. She just tossed everything, except the cream cheese in the slow cooker. Four hours later, she tossed in the cream cheese and made some rice and dinner was served. If you’re looking for other slow cooker recipes, you’ve come to the right place!

I’ve traditionally served this dish on top of rice; however I have also found the filling is suitable for tacos or even as a rich dip for chips!

Azteca Chicken

    Directions

      Azteca Chicken

      • 1 lb boneless skinless chicken breast

      • 1 can black beans, drained and rinsed

      • 1 can corn, drained

      • 1 cup salsa of choice

      • 1 teaspoon cumin

      • 1 teaspoon minced garlic

      • salt and pepper to taste

      • 8 oz block of cream cheese

      • prepared white rice for serving

      Directions

      • Put the chicken breasts in the bottom of the a slow cooker and cover with all but the cream cheese
      • Cook on low for 4 hours
      • Remove chicken and shred
      • Add cream cheese to the slow cooker and stir until melted
      • Add shredded chicken to slow cooker and stir to combined
      • Serve on white rice
