These tender cookies, with a pecan in every bite , bursting with flavor, and topped off with chocolate icing, look like little turtles.
Turtle Cookies

Ingredients
1 ½ cups sifted flour
¼ teaspoon baking soda
¼ teaspoon salt
½ cup butter
½ cup brown sugar, packed
1 egg (whole)
1 egg, divided
¼ teaspoon vanilla
1/8 teaspoon maple extract
90-150 pecan halves
1/3 cup semi sweet chocolate chips
¼ cup milk
1 Tablespoon butter
1 cup powdered sugar, sifted
Directions
- Preheat oven to 350 degrees
- Sift together the flour, baking soda and salt.
- Cream the butter and brown sugar until light.
- Add the whole egg and 1 egg yolk, the vanilla and maple extract. & beat well.
- Add the flour mixture gradually until thoroughly mixed.
- Chill batter for 30 minutes
- Arrange pecan halves in groups of 5 on greased (or parchment lined )baking sheets to resemble the head and legs of a turtle.
- Shape rounded teaspoons of dough into balls.
- Dip the bottoms into the unbeaten egg white and press lightly onto the nuts so pecan tips will show when cookies are baked.
- 10. Bake for 10 to 13 minutes, until just starting to brown
- 11. Cool and frost as follows:
- 12. Combine the chocolate chips, milk and butter in the top of a double boiler. Heat mixture until melted and blend until smooth.
- 13. Remove from heat and add the powdered sugar, beating until smooth and glossy. If it’s too thin, add a little more powdered sugar until it reaches desired consistency.
- 14. Spread over cookies using about 1 teaspoonful per cookie. Set aside until icing sets.
