Taco Pie

Years ago I found this recipe on the box of Bisquick. This pie is quick and easy to prepare and it tastes good too. Even the “picky” kid liked it. Sometimes I change it up a bit by adding an extra ingredient, such as a handful of frozen kernel corn or a sweet red pepper.

Ingredients

  • 1 lb. ground beef

  • 1 medium onion, chopped

  • 1 envelope taco seasoning mix

  • 1 can (4 oz) chopped green chilies (drained)

  • 1 cup milk

  • 2 eggs

  • ½ cup Bisquick

  • ¾ cup shredded Monterey Jack or Cheddar cheese

Directions

  • Preheat oven to 400 degrees.
  • Grease a 9” pie plate.
  • Cook beef and onion until browned. Drain off grease.
  • Stir in seasoning mix.
  • Spoon into pie plate.
  • Top with chilies.
  • Stir milk, eggs and Bisquick together and pour over meat mixture.
  • Bake for 25 minutes.
  • Sprinkle with cheese and bake 10 minutes more.
  • 10. Cool for 5 minutes
  • 11. Serve with salsa & sour cream if desired.
