Stovetop Meatloaf

Forty years ago there was a sweet little old lady named Emma, who lived in the apartment upstairs of me and she would come over to chat now and then. One day she came and brought a plate of meatloaf surrounded with carrots and potatoes in a very tasty gravy. She was just bursting with pride because she had just come back from a cook-off contest at the senior center she attended and had taken first place with the meatloaf. She shared the recipe with me and I have enjoyed it all of these years. It is made in a skillet on the stovetop.

Stovetop Meatloaf

Ingredients

  • 1 lb. ground beef

  • ½ cup bread crumbs

  • 1 egg, beaten

  • ½ cup milk

  • 1 Tablespoon parsley

  • 1 small onion, grated

  • ¾ teaspoon salt

  • 1/8 teaspoon pepper

  • 1/8 teaspoon garlic powder

Directions

  • Put all of the ingredients in a bowl and mix well.
  • Shape into a loaf and dredge in flour.
  • In a large skillet or Dutch oven, brown meat loaf on all sides in a little oil.
  • Mix 1 can cream of mushroom soup with 1 can of water. Pour over meatloaf.
  • Surround the meatloaf with carrots and potatoes.
  • Cover and simmer for 75 minutes, turning meatloaf once during cooking. .
