Stir Fry Chicken

Bite sized pieces of chicken, marinated in a delightful Asian type sauce, stir fried to perfection and served over rice. This is a great basic recipe that you can add more ingredients to make it your own. I like to add water chestnuts, snow peas and cashews. The skies the limit!

Ingredients

  • 2 boneless, skinless chicken breasts, cut into 1 inch cubes

  • 3 cloves garlic, minced

  • 2 Tablespoons soy sauce

  • 2 teaspoons sesame oil

  • ½ teaspoon black pepper

  • 1 teaspoon crushed coriander seeds

  • ½ teaspoon sugar

  • 1/8 teaspoon red pepper flakes

  • 8 green onions, chopped

  • 3 Tablespoons peanut oil

  • 3 cups cooked rice

Directions

  • Mix the chicken cubes, garlic, soy sauce, sesame oil, pepper, coriander seeds,sugar, red pepper flakes and onions in a dish, cover and marinate for 1 hour, stirring occasionally.
  • Heat peanut oil in wok and when hot, add the chicken and marinade.
  • Cook on high, stirring often, for 5 minutes or until chicken is done.
  • Serve over hot rice.
