Bite sized pieces of chicken, marinated in a delightful Asian type sauce, stir fried to perfection and served over rice. This is a great basic recipe that you can add more ingredients to make it your own. I like to add water chestnuts, snow peas and cashews. The skies the limit!
Stir Fry Chicken

2 boneless, skinless chicken breasts, cut into 1 inch cubes
3 cloves garlic, minced
2 Tablespoons soy sauce
2 teaspoons sesame oil
½ teaspoon black pepper
1 teaspoon crushed coriander seeds
½ teaspoon sugar
1/8 teaspoon red pepper flakes
8 green onions, chopped
3 Tablespoons peanut oil
3 cups cooked rice
Directions
- Mix the chicken cubes, garlic, soy sauce, sesame oil, pepper, coriander seeds,sugar, red pepper flakes and onions in a dish, cover and marinate for 1 hour, stirring occasionally.
- Heat peanut oil in wok and when hot, add the chicken and marinade.
- Cook on high, stirring often, for 5 minutes or until chicken is done.
- Serve over hot rice.
