Samosa (Appetizer)

Years ago my friend Prem would host parties to which I was invited. Prem was from India, so all the food they served were Indian dishes. This appetizer was one of my favorites. I describe it as a little fried pie stuffed with a spicy potato and pea filling. It is absolutely delicious and can be served hot or cold!

Ingredients

  • Dough***
  • 1 cup flour

  • Pinch of salt

  • ½ teaspoon baking powder

  • 1 ½ Tablespoon vegetable oil

  • Water (enough to form dough)

  • Filling
  • 1 Tablespoons vegetable oil

  • 1 onion, peeled and chopped

  • 2 teaspoons garam masala

  • ½ teaspoon salt

  • ½ teaspoon chili powder

  • 1 pound potatoes, peeled, boiled, cooled and chopped into small pieces

  • 4 Tablespoons frozen peas

  • 2 teaspoons dry mango powder

  • Flour Paste
  • 1 Tablespoon flour

  • Water( enough to form a thick paste)

Directions

  • Sift flour, salt & baking powder together.
  • Add the oil and enough water to form dough.
  • Knead well, cover and set aside. to rest while you make the filling.
  • Saute onions in the oil until tender.
  • Add the masala, salt & chili powder and fry for 1 minute.
  • Add the potatoes and peas and fry for 2-3 minutes.
  • Sprinkle with the mango powder, remove from heat and cool
  • After the filling is prepared, knead the dough again for a few minutes and make 16-20 even sized balls of dough. 9. On lightly floured surface, roll each ball into thin 5 inch circles.
  • 10. Cut the circles in half and apply flour paste along the straight edges of the half circles.
  • 11. Bring the 2 corners together, overlapping slightly to make a cone
  • 12.. Secure by pressing pasted edges together
  • 13. Fill cones with filling, apply flour paste and seal.
  • 14. Fry in hot oil until golden brown.
  • 15. May be served hot or cold.
