I had leftover grilled salmon , so I searched for a recipe that calls for cooked salmon. I found this one which I tweaked a little and my family loved it. I chose to not make a crust but it would be good with a crust as well.
Salmon Gruyere Quiche

6 large eggs
¾ cup half & half or whole milk
2 cups Gruyere cheese, shredded
½ teaspoon salt
Dash of cayenne pepper
Dash of smoked paprika
1 teaspoon dried basil
1 cup cooked salmon
1 Tablespoon butter
¼ cup sliced green onions
2 cloves garlic, minced
Directions
- Preheat oven to 375 degrees F.
- Combine eggs and half & half in a medium bowl; whisk until well blended.
- Add the cheese, salt,paprika, cayenne and basil; mix and set aside.
- In a skillet, saute the green onions and garlic in butter for 1-2 minutes. Remove from heat.
- Flake the salmon with a fork and gently add it to the green onion mixture.
- Spray a 9-inch pie plate with cooking spray
- Combine all ingredients together and pour into the pie plate.
- Bake for 30 minutes or until egg mixture is set.
- Let stand 10 minutes before serving.
