Rum Balls

Here is another recipe from my “Christmas Cookie Collection”. These bite size treats are bursting with nuts, rum and gooey goodness and are rolled in powdered sugar. I place each ball into a paper candy cup so the rum doesn’t leach into the other cookies on the tray. I’ve had so many requests through the years for this recipe. I hope you will enjoy them as well.

Rum Balls

Ingredients

  • 3 cups vanilla wafers, crushed

  • 1 cup nuts (pecans preferred)

  • 1 cup powdered sugar

  • 3 Tablespoons corn syrup (light)

  • 1½ Tablespoon cocoa

  • ½ cup rum (I use Meyer’s dark rum)

Directions

  • Put all of the ingredients in a bowl and mix well.
  • Cover and refrigerate until dough is chilled.
  • Roll into1” balls and roll in powdered sugar.
  • Place each rum ball into a paper candy cup and store in an airtight container, in a cool place.
