Here is another recipe from my “Christmas Cookie Collection”. These bite size treats are bursting with nuts, rum and gooey goodness and are rolled in powdered sugar. I place each ball into a paper candy cup so the rum doesn’t leach into the other cookies on the tray. I’ve had so many requests through the years for this recipe. I hope you will enjoy them as well.
Rum Balls
Course: Cookies and BarsServingsservings
Ingredients
3 cups vanilla wafers, crushed
1 cup nuts (pecans preferred)
1 cup powdered sugar
3 Tablespoons corn syrup (light)
1½ Tablespoon cocoa
½ cup rum (I use Meyer’s dark rum)
Directions
- Put all of the ingredients in a bowl and mix well.
- Cover and refrigerate until dough is chilled.
- Roll into1” balls and roll in powdered sugar.
- Place each rum ball into a paper candy cup and store in an airtight container, in a cool place.
