Delicate, buttery cookie, filled with nuts and potato chips! Talk about yummy! This is another recipe from my “Christmas Cookie Collection”, but they are good any time of the year!
Potato Chip Cookies

1 lb. butter
1¼ cup sugar
3½ cup flour
1 cup crushed potato chips
½ cup walnuts or pecans, chopped
Directions
- Preheat oven to 350 degrees
- Cream butter and sugar until light and fluffy
- Add flour and mix well.
- Add the crushed chips and nuts. Mix well.
- Drop cookies onto ungreased cookie sheet. (I line my cookie sheet with parchment paper)
- Bake for 10 to 12 minutes or until just starting to brown at the edges.
- Transfer to wire rack to cool

- Makes approximately 95 cookies
