Oven Roasted Chicken

1 broiler/fryer chicken (3-4 pounds)
2 medium potatoes, sliced into ½ inch cubes
1 large onion, sliced into 8 wedges
3 medium carrots, peeled and sliced into ½ inch pieces
2 pressed garlic cloves
1 Tablespoon olive oil
½ teaspoon dried thyme leaves
½ teaspoon dried rosemary
Salt & pepper to taste
½ cup water
Directions
- Preheat oven to 400 degrees.
- Rinse chicken and pat dry with paper towel.
- Place chicken in roaster pan, breast side up.
- Place potato, onion and carrots around the chicken.
- Combine the oil and spices in a cup and brush over chicken.
- Add water to the pan, cover and bake for 1 hour.
- Remove lid and cook 15 minutes more.
- Remove from oven. Let rest 10 minutes before carving.
