By far, this is one of my favorite EASY recipes. No fancy cream sauce, no massive amounts of ingredients…just simple everyday items from your cupboard. I have found that brining my chicken breasts for 30 minutes to 1 hour before preparing the dish makes for tender and juicy chicken. This step is totally optional. If you decide not to brine, just jump to step #3, being sure to pat the chicken dry first.
Luscious Chicken Breasts

4 skinless, boneless chicken breasts (pound pieces to 1/2 inch thick)
2 Tablespoons olive oil
2 Tablespoons brown sugar, packed
1 1/3 teaspoons paprika
1 1/3 teaspoon oregano
1/3 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
- BRINE***(optional)
2 cups cool water
2 Tablespoons kosher salt
Directions
- Soak chicken in the brine for 30 minutes to 1 hour.
- Remove from brine and pat dry with paper towel.
- Preheat oven to 425 degrees
- Rub both sides of the chicken breast with olive oil
- Combine the brown sugar, paprika, oregano, garlic powder, salt and pepper in a bowl.
- Rub the sugar & spice mixture onto both sides of the chicken breasts.
- Bake in preheated oven for 18 minutes or until temperature reads 165F on a meat thermometer
- Remove from oven and let rest for 5 minutes before slicing.
