Cuban Pork Sandwich

The first time I ever had one of these sandwiches was in the cafeteria at work. It was actually a Panini sandwich. I wasn’t sure I was going to like it, but I’m open to new dishes. Much to my surprise it was delicious. I recreated the sandwich and prepare it like a grilled cheese sandwich. It’s not as crispy as a Panini but is just as flavorful. Its a perfect meal to use up leftover pork tenderloin . I often prepare an extra pork chop just so I can make this sandwich.

Cuban Pork Sandwich

Ingredients

  • 4 slices sour dough bread

  • 4 teaspoon yellow mustard

  • 4 slices swiss cheese

  • 6 ounces leftover cooked pork , thinly sliced

  • 4 thin slices ham

  • 4 slices sandwich sliced dill pickles

  • Butter OR olive oil

Directions

  • Butter one side of each slice of bread (or brush on olive oil). This side of the bread will be on the outside.
  • On the opposite side, spread the mustard on each slice of bread.
  • Layer the bread with 1 slice of swiss cheese, then the pork.
  • Next add the ham , then the pickles followed by another slice of swiss.
  • Preheat a skillet (or Panini press) and fry the sandwiches until golden brown and cheese has melted (just like you would a grilled cheese sandwich).
  • Serve with a handful of potato chips if desired.
