Every year as the holidays neared, my friend Scott would start talking about going home to visit his folks and eating a plateful of “Cranberries in the Snow. ” I had never heard of that, so he explained that it was a jello dish that his Mom made, so I asked for the recipe. I made it for my family at Christmas and they couldn’t stop raving about it. Serving this dish at Christmas has now become “a tradition” in my home as well. A special “thank you” to Scott and his Mom for sharing this yummy licious recipe!
Cranberries in the Snow Jello

servingsIngredients
2 cups sugar
1 pkg. fresh cranberries (12 oz)
¾ cup water
1 large pkg. Cherry jello
1 cup chopped pecans
1 cup chopped celery
1 large can pineapple tidbits

- Topping
1 pint heavy whipping cream, whipped
1 pkg cream cheese, softened
1 (7oz) jar marshmallow fluff
Directions
- Put the sugar, cranberries and water in a saucepan and cook until the cranberries “pop”. Remove from stove and cool to lukewarm.
- Add the jello, pecans, celery and pineapple to the lukewarm cranberries, mix well and spread into a 9×13 casserole dish.
- Refrigerate until set
- Prepare the topping by whipping the whipping cream until stiff peaks form.
- in a separate bowl, whip the cream cheese with the marshmallow fluff until well combined.
- Combine the cream cheese mixture with the whipped cream and spread it over the jello mixture.
- Refrigerate until ready to serve.
