Cinnamon Swirl Coffee Cake

Recently I was at the car dealers waiting for my car to be serviced when a lady came in and noticed I was reading a cooking magazine. We started chatting and I told her all about my website. We talked for quite some time about different coffee cakes and she mentioned that her daughter bakes a delicious cinnamon coffee cake. I asked if her daughter would be willing to share the recipe and I jotted down my address. A few days later, this recipe was tucked beneath my front door! So, the next day, I decided to give it a whirl. I was a little worried, as the batter was very thick, but it baked up quite nicely. I cut the recipe in half because there’s only the two of us. I used an 8×8″ pan and stayed with the same baking time and temperature. This reminded me of a European coffee cake with a crumbly texture. It sounds like a lot of cinnamon, but honestly, it was just perfect. I wish I knew the lady’s name so I could thank her for sharing this recipe. I guess I’ll just have to eat a second piece in her honor!

Cinnamon Swirl Coffee Cake

Ingredients

  • Cake
  • 3 cups flour

  • 1 cup sugar

  • 4 teaspoons baking powder

  • ¼ teaspoon salt

  • 1 ½ cups milk

  • 4 Tablespoons butter, melted

  • 2 large eggs

  • 2 teaspoons vanilla

  • Cinnamon Swirl

  • 1 cup butter, softened

  • 1 cup packed brown sugar

  • 2 Tablespoons flour

  • 1 Tablespoon cinnamon

  • Glaze

  • 1 cup, powdered sugar

  • 2 Tablespoons milk

  • 1 teaspoon vanilla extract

Directions

  • Preheat oven to 350 degrees
  • Grease a 9×13” pan and set aside
  • In a large bowl, whisk together the flour, sugar, baking powder and salt.
  • In a smaller bowl, combine the milk, melted butter, eggs and vanilla.
  • Add the wet mixture to the flour mixture, stirring until combined.
  • Spoon the batter into the prepared baking dish, spreading out evenly.
  • Prepare the cinnamon swirl by beating the butter, brown sugar, flour and cinnamon together until smooth.
  • Drop the cinnamon swirl mixture in dollops on top of the cake batter.
  • Swirl the cinnamon mixture into the batter with a knife, to create a marble effect.
  • Bake for 25-30 minutes or until a toothpick inserted in the center comes out nearly clean.
  • While the cake is baking, prepare the glaze by mixing the powdered sugar, milk and vanilla extract together, stirring until the mixture is smooth.
  • When the cake is done, remove it from the oven and place onto a cooling rack.
  • After cooling for 5-10 minutes, drizzle the glaze over the warm cake.
  • Let cool and then serve.
