Chocolate Chip Banana Bread

½ cup unsalted butter, room temperature
½ cup sugar
¼ cup firmly packed light brown sugar
2 eggs, beaten
1 teaspoon vanilla extract
1/3 cup buttermilk or sour cream
1 ½ cups very ripe bananas (approx. 3 medium size), mashed
1 ¾ cups all purpose flour
¼ teaspoon salt
1 teaspoon baking soda
¼ teaspoon baking powder
¼ teaspoon cinnamon
½ cup chocolate chips
½ cup chopped pecans (optional)
Directions
- Preheat oven to 350 degrees
- Spray coat a 9×5 inch loaf pan with non-stick spray
- In a large bowl, cream the butter and sugars.
- Stir in the eggs, vanilla, buttermilk and mashed bananas, blending well.
- Fold in the flour, salt, baking soda, baking powder, cinnamon, chocolate chips and pecans.
- Spoon the mixture into the loaf pan and bake for 55 to 60 minutes or until a toothpick inserted in the middle comes out clean.
- Let cool 15 minutes before removing from the pan.
- Cool thoroughly before serving.
