Cherry Cheesecake Tarts

Ingredients
- Crust
2 cups graham cracker crumbs
2 Tablespoons sugar
1 stick butter (melted)
- Filling
16 ounces (2 packages) cream cheese, softened
¾ cup sugar
3 eggs
1 teaspoon vanilla
- Topping
1 can (21 ounces) Cherry Pie Filling
Directions
- To Prepare the crust:
- In a medium bowl, combine the graham cracker crumbs,sugar and melted butter and mix well.
- Place mini cupcake liners (candy size) on a baking sheet (one with a lip)
- Put ½ teaspoon crust mixture into each paper cup and press the crumbs down with the bottom of a shot glass.
- Preheat oven to 300 degrees
- To Prepare the filling :
- In a large bowl, beat the cream cheese and sugar together until well incorporated.
- Add the eggs, one at a time, beating well after each addition.
- Add the vanilla and mix well.
- Fill the paper cups ½ full.
- Bake at 300 degrees for approx. 15 minutes (until just starting to brown). Watch carefully…they burn fast.
- Cool & then cover each tart with a cherry from the can of cherry pie filling.
- Keep refrigerated until serving time.
