It’s that time of year when I find myself yearning for a big bowl of hot soup to warm me up on a cold winter’s day. This easy to make recipe for a creamy, thick and tasty soup, hits the spot! And the nice thing is, you can make it your own by adding additional herbs or spices, such a rosemary, coriander, nutmeg or even a dash of cinnamon. You can use vegetable broth instead of the chicken broth. You can substitute coconut milk or almond milk for the whipping cream. The possibilities are endless. Personally, I like the recipe as is…simple, yet delicious. If I make this for lunch, I enjoy it with a buttered dinner roll. If served for dinner, I usually serve this with a grilled cheese or a Monte Cristo sandwich.
Carrot & Ginger Soup

2 Tablespoons butter
2 onions, peeled and chopped
6 cups chicken broth
2 pounds carrots, peeled and sliced
2 Tablespoons freshly grated ginger
1 cup whipping cream
Salt & pepper to taste
Fresh parsley for garnish (optional)
Directions
- Melt the butter in a large pot.
- Add the onions and saute until the onions are soft and transparent.
- Add the broth, carrots and ginger.
- Cover and bring to a boil.
- Reduce heat and simmer until carrots are fork tender.
- Remove from heat and puree the carrots in batches in a blender (or use an immersion blender) blending until carrots are smooth.
- Return carrot mixture to the pot and add the whipping cream.
- Heat for a few minutes.
- Add salt & pepper to taste.
- 10. Garnish with fresh parsley flakes if desired.
