When I moved up North a few years ago, I went to a church bake sale. I was expecting to find the standard fare…pound cakes, chocolate chip cookies and such. I knew whatever they had up for grabs must’ve been good because I had to stand outside in the snow for over half an hour just to get in the vestibule. Once inside, I saw tables filled with baked goods I had never heard of…Cardamom bread, cardamom cookies, Saffron rolls,etc. Much to my delight, I enjoyed each of the items I purchased. I decided to investigate this love of Cardamom. I learned that the Upper Peninsula is rich in Finnish culture, and who loves Cardamom more than the Finns. Luckily I found and tried 4 different cookie recipes and this was my favorite. I hope you enjoy it too!
Cardamom Cookies

1 cup flour
1/4 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon cardamom
1 egg
3/4 cup sugar
1 stick butter, melted
Directions
- Preheat oven to 350 degrees
- In a large bowl, whisk the flour, baking soda, cinnamon and cardamom together.
- In a separate bowl, beat the egg until frothy,
- Add the sugar to the egg and beat well.
- Add the melted butter to the egg mixture and beat for 3 minutes
- Add the egg mixture to the flour mixture and beat for 3 more minutes.
- Spoon up a Tablespoon of batter and drop onto a parchment paper lined cookie sheet, 2 inches apart
- Bake for 12-13 minutes or until edge of cookies are just starting to brown.
- Immediately remove from cookie sheet and cool on baking rack,
- Makes 32 cookies
- Note*** I use a small cookie scoop for uniform sized cookies.
