Caramelized Pork Loin with Apples

This pork loin roast, surrounded in apples and other goodies, always turns out tender and juicy, not to mention mouth watering delish!

Caramelized Pork Loin with Apples

Ingredients

  • 2 Tablespoons packed brown sugar

  • 1 teaspoon ground cumin

  • ¾ teaspoon salt

  • 1/8 teaspoon ground red pepper

  • 1/8 teaspoon black pepper

  • 1 clove garlic, minced

  • 2 ½ lb. boneless pork loin

  • 1 Tablespoon vegetable oil or bacon grease

  • 2 medium onions, cut in wedges

  • 1/3 cup balsamic vinegar

  • 2 Tablespoons butter

  • 2 Granny Smith apples, cut into wedges

  • 2 Rome apples, cut into wedges

Directions

  • Preheat oven to 425 degrees
  • Combine first five ingredients in a small bowl.
  • Rub garlic over the surface of the pork loin.
  • Heat a large skillet with vegetable oil or bacon grease over medium-high heat
  • Add the pork and onion and cook for 10 minutes or until browned on all sides, turning occasionally
  • Place the pork in a 13X9 inch baking dish coated with cooking spray.
  • Sprinkle the sugar mixture over the roast.
  • Arrange the onion around the pork and drizzle with vinegar.
  • Bake at 425 degrees for 20 minutes.
  • 10. Melt butter in large skillet over medium/high heat: add apples and saute’ for 5 minutes or until golden.
  • 11. Remove the pork from the oven & arrange apples around pork.
  • 12. Reduce heat to 350 degrees and bake for 20 minutes more .
  • 13. Drizzle pan drippings over pork, apples and onion and enjoy!
