I usually bake these cookies during the Christmas holidays, but I must admit, they are delicious anytime of the year.
Butter Pecan Cookies

• 3/4 cup pecans, chopped
• 1/2 cup unsalted butter, room temperature
• 1/3 cup sugar
• 1 teaspoon vanilla extract
• 1/8 teaspoon salt
• 1 cup all-purpose flour
Directions
- Preheat oven to 350 degrees.
- Line cookie sheets with parchment paper.
- With an electric mixer, beat the butter for about a minute
- Add the sugar and beat until light, about 1 minute more.
- Add the vanilla and mix well.’
- Add the salt and flour, mixing just until the dough comes together.
- Fold in the pecans.
- Roll the dough into balls, using about 1 Tablespoon dough per cookie.
- Place ball onto cookie sheet about 3 inches apart.
- 10.Gently flatten the cookie with the bottom of a glass
- 11. Bake for approx. 15 minutes, or until golden brown.
- 12. Cool cookies on a wire rack.
Notes
- I usually double this recipe as it only makes about a dozen cookies.
