Butter Pecan Cookies

I usually bake these cookies during the Christmas holidays, but I must admit, they are delicious anytime of the year.

Butter Pecan Cookies

Ingredients

  • • 3/4 cup pecans, chopped

  • • 1/2 cup unsalted butter, room temperature

  • • 1/3 cup sugar

  • • 1 teaspoon vanilla extract

  • • 1/8 teaspoon salt

  • • 1 cup all-purpose flour

Directions

  • Preheat oven to 350 degrees.
  • Line cookie sheets with parchment paper.
  • With an electric mixer, beat the butter for about a minute
  • Add the sugar and beat until light, about 1 minute more.
  • Add the vanilla and mix well.’
  • Add the salt and flour, mixing just until the dough comes together.
  • Fold in the pecans.
  • Roll the dough into balls, using about 1 Tablespoon dough per cookie.
  • Place ball onto cookie sheet about 3 inches apart.
  • 10.Gently flatten the cookie with the bottom of a glass
  • 11. Bake for approx. 15 minutes, or until golden brown.
  • 12. Cool cookies on a wire rack.

Notes

  • I usually double this recipe as it only makes about a dozen cookies.
